one pot, protein-packed ground chicken teriyaki bowls
tired of boring meal prep? try this elevated version of chicken and rice that’s loaded with flavor, but sacrifices none of your macros :)
what you need for 5 servings:
2 tablespoons olive oil
1 lb of ground chicken
3 garlic cloves, smashed and chopped
12 ounces of snipped and chopped green beans (fresh or frozen)
12 ounces of shelled edamame (fresh or frozen)
12 ounces of riced cauliflower, steamed
½ cup teriyaki sauce, I like the organic one from Whole Foods
1 small onion, finely diced
½ red bell pepper, finely diced
1 cup of basmati or jasmine rice
instructions:
in a large pan or Dutch oven, warm the olive oil over medium heat. add your ground chicken and cook, seasoning as desired. cook about halfway through, then add the onions, pepper, and the garlic, stirring, until the chicken is cooked and the veggies are soft and fragrant, about 5 minutes. then add in the edamame and green beans and allow them to steam and soften with the chicken mixture. once mixture is all cooked, add in teriyaki sauce and stir.
while the chicken mixture is cooking, steam your rice and then fold in the steamed cauliflower for more veggies and volume.
