protein muffins

are you #TeamSavory or #TeamSweet? 👩🏽‍🍳 either way, here are two ways to level up your weekly meal prep with protein muffins using Kodiak Protein Pancake mix (or ALDI’s dupe of it)!

what you need for 12 sweet banana muffins:

  • 3 ripe bananas

  • ¾ cup cottage cheese

  • 2 eggs

  • ½ cup real maple syrup

  • 1 tsp vanilla

  • 1 ¾ cup Kodiak Buttermilk Power Cakes Mix

  • 1 tsp baking powder

  • Pinch of salt

    instructions:

  • preheat the oven to 325°F and grease a muffin tin with baking spray or use a silicone baking pan

  • in a large bowl, mash the bananas until they have a lumpy, liquid-like texture.

  • add maple syrup, cottage cheese, and vanilla, then mix until combined.

  • whisk in the eggs until fully incorporated.

  • stir in the Kodiak Buttermilk mix, baking powder, and salt, mixing until just combined—do not overmix.

  • pour the batter into your cupcake tins and bake for 20-25 minutes, or until a toothpick comes out clean when inserted into the center of the muffin!

what you need for 12 savory muffins:

  • 1 cup Kodiak Cakes pancake mix 

  • 1 cup choice of milk

  • 2 eggs

  • 1 lb ground breakfast sausage (I used Butterball Turkey Sausage)

  • 1 cup low-fat shredded cheddar cheese + extra for topping

  • 3 tbsp maple syrup 

    instructions:

    1. preheat the oven to 325°F and grease a muffin tin with baking spray or use a silicone baking pan

    2. preheat a pan to medium-high heat. add the breakfast sausage and cook for 7-10 minutes until fully cooked/warmed and it has a nice browned color

    3. in a large bowl, add the pancake mix, milk, eggs, cooked sausage, and cheddar cheese and mix until just combined, being careful not to overmix. 

    4. scoop the mix into the greased muffin tin, filling each one 3/4 full. 

    5. top each with a little sprinkle of cheese and a light drizzle of maple syrup

    6. bake for 20-25 minutes, or until a toothpick comes out clean when inserted into the center of the muffin!
