Lemon Kale Crunch
this lemon kale crunch salad is a dream! full of bright flavors and superfoods like walnuts, pistachios, and of course kale, this salad will have you smiling all summer long.
what you need:
- 1/4 cup olive oil 
- 1/4 cup lemon juice 
- 2 cloves of garlic, minced 
- salt and pepper to taste 
- 1 teaspoon honey or other natural sweetener 
- 1/4 cup parmesan cheese, shredded 
- 1/2 cup of mixed walnuts, almonds, pistachios, and dried cranberries 
- 3 cups of chopped kale 
- 1 chicken breast or other protein, prepared how you like 
instructions:
1. in a small bowl, combine your olive oil, lemon juice, garlic, honey, parmesan cheese, and salt + pepper to taste. whisk until well combined.
2. wash and finely chop your kale, adding it to a large bowl. add in your mixed nuts and your vinaigrette, then toss together.
3. top with your favorite protein and enjoy!
