Broccoli Cheese Tots
Ingredients
- 2 cups of broccoli, either fresh or frozen 
- 1 egg 
- 4 ounces of sharp cheddar cheese, grated 
- 1/4 cup of seasoned panko breadcrumbs 
- Your favorite seasoning mix 
- 1/2 of a yellow onion 
- 2 cloves of garlic 
Instructions
- Dice your onion and garlic, and then saute them in a pan until the onions are soft. Once done, set aside to cool. 
- Cook your broccoli until it’s a little bit less than done. If you are using fresh broccoli, boil until tender, but not soft. If you use frozen broccoli, cook according to packaging, I microwave mine for about 5 minutes. 
- Transfer your broccoli to a bowl, and using a paper towel, squeeze all the excess water out. 
- In a food processor, blend up your broccoli and the cooled onion and garlic until the mixture is very fine, almost like a paste. 
- Transfer the broccoli mixture into a bowl and add the egg, breadcrumbs and grated cheese. Also add in your seasonings, I used a sprinkle of Hidden Valley Ranch seasoning and salt! 
- Mix until combined with a flat spatula, and then begin forming your tots. 
- Place tots on a greased baking sheet and bake at 350 degrees for about 20 minutes.
